In case anyone else finds this interesting, I came across the following list on Wikipedia
[so yes, all the usual caveats about Wikipedia apply, perhaps there is a better list somewhere else someone can post up, or you might know of others to add / corrections]
Candidates for canonisation related to Ireland,
(e.g. born, died, or lived their religious life in Ireland)
Blessed
Edmund Ignatius Rice
Joseph Marmion (Columba)
John Sullivan
Venerable
Matt Talbot
Catherine McAuley
Edel Quinn
Honora (Nano) Nagle
Mary Aikenhead
Patrick Peyton
Servants of God
Andrew Mullen
Alice O'Sullivan
Patrick Ryan
Margaret Mary Healy Murphy
William (Willie) Doyle
Joseph Shanahan
Edward Joseph Flanagan
Martyrs of North Korea
Anthony Collier
Patrick Reilly
Thomas Cusack
John O'Brien
Francis Canavan
Teresa Kearney
Alphonsus (Alfie) Lambe
Frank Duff
Declan O'Toole
Colm O'Brien
Although she is not servant of God and the consideration of opening her cause is in early stages with her order and relevant diocese, I’ll also just mention Sr. Clare Crockett from Derry, who is gathering a lot of following and interest among Catholics in Derry.
So, who’s causes do you think might be advancing the most at present, or who's cause might currently be well represented?
I’ve come across the most interest from the faithful in Ireland for Matt Talbot, Edel Quinn, Alfie Lambe, Frank Duff, Clare Crockett. I’m sure people know of others that are readily popular as well?

It might be advisable to include some details about these people, many of whom are not widely known. It is probably relevant that three of the five listed as best-known are Legion of Mary, and Sr Clare crockett's cause is being promoted by her order. Causes tend to advance when they have an organisation behind them, and recently founded organisations tend to promote canonisation of founders/members as a sign of divine approval for their work.
