There is an African woman in my parish who, during Eucharistic Adoration, goes up to the altar and kneels before the monstrance. Then she waves her arms slowly to together and away from each other, over her head, her fingers extended. It's intriguing. Has anyone else seen anything like this?

The extended fingers sound vaguely Orthodox - I wonder might she originally have been a Copt or Ethiopian Orthodox? I don't know enough about these groups to judge. Many African denominations of Christianity have a reputation for expressive worship.

If she was a Copt, I'm glad she's "Copt on" and become a Catholic!

Careful, there are both Egyptian and Ethiopian Coptic Churches in Communion with Rome, so there are Catholic Copts

I saw an Indian woman kneel through the consecration at Mass this morning with outstretched arms from elbow to fingers, but she held them steady. I thought she may have been a Thomas Christian. The movement you describe in the African worshipper is what I would expect from an Ethiopian Coptic background.
